Ethiopia
Ethiopia is a place where the past still lives in the present. Its churches are carved straight into rock, and ruins from the Axumite Kingdom lie scattered across dry hills. The country was never colonised, so its language, script, and way of life have stayed largely unchanged. Meals are shared over injera and spicy lentil stews, often eaten by hand.
